A bit about them:

At only 29 years old, Lauren Eldridge is Group Pastry Chef across the Van Haandel Restaurant Group, including the iconic Stokehouse restaurant in St. Kilda. In 2015 she received the widely renowned Josephine Pignolet Young Chef of the Year Award, and has since perfected the intricacies of pastry and established a prominent name within the industry. She has worked across an array of Sydney kitchens, and the world including three Michelin starred restaurants; Osteria Francescana in Italy and Parisian, Le Cinq.

Lauren is recognised for her innovation and creation within the pastry world, most recently reinventing the Neapolitan ice cream with a refined yet extravagant interpretation. The show-stopping dessert features 3 stacked squares of  vanilla anglaise, Davidson plum and the dark chocolate.
